Varia VS3 Gen 2: 38mm Single Dose Coffee Grinder

The Varia VS3 Gen 2 Coffee Grinder is part of Varia Brewing’s lineup of compact, precision-focused grinders designed for modern home baristas. The VS3 (“Variable Speed 3”) was introduced as a minimalist single-dose grinder aimed at users who prioritize grind accuracy, low retention, and compact design.

The Gen 2 version builds on the original Gen 1 with improvements to durability, workflow, and internal components, including an upgraded gearbox and refined burr alignment.

Unlike traditional hopper-based grinders, the VS3 follows a single-dose philosophy where users grind only the beans needed for each brew. This approach has become increasingly popular among specialty coffee enthusiasts seeking freshness and repeatability.

At $269, the Gen 2 occupies a competitive position in the single-dose market, sitting between manual grinders like the 1Zpresso J-Max and electric competitors like the Baratza Sette 270 and Eureka Mignon Notte. It distinguishes itself through 0.01mm stepless adjustment, a 76.5-degree sloped grind chamber, and a burr upgrade path that includes four aftermarket options.

This is not a fast grinder. An 18-gram espresso dose takes approximately 34–40 seconds. The trade-off is reduced heat generation, quieter operation compared to high-speed competitors, and minimal retention when paired with proper technique.

What Is the Varia VS3 Gen 2 Coffee Grinder

The Varia VS3 Gen 2 is a mid-range single-dose electric grinder from Varia, a New Zealand-based company specializing in compact coffee equipment. It sits between entry-level options and premium prosumer models, targeting users who want precision control without sacrificing counter space.

As one of the best single dose grinders of 2026, the VS3 Gen 2 has gained recognition for its combination of compact footprint, precise adjustment, and low retention design. It appeals to home baristas who value freshness and accuracy over grinding speed.

The grinder uses 38mm inner and 48mm outer conical burrs made from high-nitrogen 420 stainless steel with HRC58 hardness. The burrs shift vertically in 0.01mm (10-micron) increments, allowing micro-adjustments for espresso dialing. The motor operates at 190 RPM no-load, approximately 170 RPM under grinding load, which is slower than most competitors but generates less heat.

The 76.5-degree angled grind chamber helps grounds flow naturally toward the exit, reducing buildup. A magnetic hopper, bellows system, and anti-popcorning insert complete the workflow. The result is a retention of less than 0.1 grams with the Ross Droplet Technique (RDT), or less than 0.2 grams without.

What’s in the Box

  • The grinder itself (with stainless steel burrs installed)
  • Magnetic dosing cup
  • Silicone bellows
  • RDT spray bottle
  • Cleaning brush
  • Toolkit

Key Features

Stepless Grind Adjustment

Rotate the magnetic hopper to adjust grind size with 0.01mm (10-micron) precision. No preset steps. Infinite control between finest and coarsest settings.

38mm Conical Burrs

Inner 38mm and outer 48mm conical burrs made from high-nitrogen 420 stainless steel. HRC58 hardness rating. Designed for durability and uniform particle distribution. Suitable for both espresso and filter coffee.

Burr Upgrade Path

Supports four burr sets: Standard HRC58 (stock), Hypernova HRC60, Hypernova Ultra HRC67, and third-party alternatives. Swap in approximately 5 minutes without tools.

Single Dose Design

30g hopper capacity. Grind only what you need per brew. No stale grounds left behind.

Ultra-Low Retention

Less than 0.1g with RDT. Less than 0.2g without RDT per 10g dose. Achieved through sloped geometry, bellows system, and minimal grind chamber.

76.5-Degree Angled Grind Chamber

Sloped geometry helps grounds fall naturally through the burrs and out the chute. Reduces buildup and improves flow.

Bellows System

Push air through the chamber after grinding to clear residual grounds. Keeps retention minimal and workflow clean.

Anti-Popcorning Insert

Prevents beans from bouncing during grinding. Maintains consistent feed rate and improves uniformity.

Magnetic Hopper

Attaches securely with magnets. Easy removal for cleaning and bean changes. Integrated grind adjustment mechanism.

Low RPM Motor

190 RPM no-load, approximately 170 RPM under load. 100W DC motor with full stainless steel gearbox. Reduces heat buildup and preserves bean flavor.

Performance and Grinding Quality

Espresso Performance

The Varia VS3 Gen 2 is particularly suited for espresso:

  • Fine stepless control enables precise dialing
  • Consistent grind size supports stable extraction
  • Low retention improves shot-to-shot consistency

Filter and Coarse Brewig

The grinder also performs across:

  • Pour-over (V60, Chemex)
  • French press
  • Cold brew

The burr design allows for balanced grind distribution across a wide range, though it is still optimized toward espresso.

Daily Workflow

For Espresso
  1. Weigh 18–20g of beans
  2. Add a single droplet of water (RDT) to reduce static
  3. Add beans to the 30g hopper
  4. Rotate hopper to adjust grind (typically fine range for espresso)
  5. Grind into portafilter or dosing cup
  6. Use bellows to clear residual grounds
  7. Distribute, tamp, and pull shot
Switching Beans
  1. Note current hopper position
  2. Remove hopper and clear remaining beans
  3. Add new beans
  4. Adjust grind setting for new roast profile
  5. Grind a small purge dose if changing from very different settings
Cleanup
  1. Remove magnetic hopper
  2. Lift out burr set
  3. Brush burrs and chamber
  4. Wipe exterior with dry cloth
  5. Reassemble

Comparison with Similar Grinders

VS3 Gen 2 vs Baratza Sette 270

The Sette 270 costs roughly $50 more and grinds significantly faster at 3.5–5.5g/sec. It offers programmable timed dosing and 270 settings. It is also louder and larger.

The VS3 Gen 2 is slower but more compact, generates less heat, and has a clearer burr upgrade path. The Sette 270 suits speed-focused users. The VS3 Gen 2 suits space-constrained precision seekers.

VS3 Gen 2 vs Baratza Encore ESP

The Baratza Encore ESP is more beginner-friendly and built for convenience, with a hopper-based design and stepped grind settings that make daily use simple and consistent.

The VS3 Gen 2 is more compact, uses a single-dose workflow, and offers stepless adjustment for finer grind control. It also has lower retention, making it better for freshness and precision.

The Encore ESP suits users who want ease of use and quick daily grinding. The VS3 Gen 2 suits users who prioritize control, low retention, and a more precise espresso workflow.

    Martin G.

I’ve been using the varia vs3 for about a month now and I honestly didn’t expect to notice this much of a difference. I’m really into espresso, so I’ve gone through a few grinders over the years, but this one’s probably been my favorite so far, the shots I’m pulling now are way more consistent and sweeter tasting, especially with lighter roasts. It also doesn’t make a huge mess which my wife definitely appreciates because my old encore used to leave coffee grounds everywhere. Weirdly enough, making coffee in the mornings has become more of a thing in our home now, my wife asks for lattes almost every day and even the kids get excited when they smell the beans grinding before school. It just made the whole routine feel nicer. I also love that it’s compact and quiet. doesn’t sound like a jet engine at 6am which matters more than I thought it would lol. Overall zero regrets buying it.
